As the pork cooks, the fat melts and sort of self-bastes during cooking. It’s also well marbled with fat, which prevents the pork from drying out while cooking.
It’s a relatively tough cut and does well when cooked over an extended period. We start with a pork shoulder - also called pork butt or Boston butt.
